The breakfast cookie is a tasty solution to those lazy weekends where you continue to mosey your way into the kitchen all day looking for a snack. Like having a handheld bowl of oatmeal, these hearty cookies are filled with apples, oats and cranberries and make a well-rounded grab-and-go breakfast any day of the week.

WINTER BREAKFAST COOKIE
Yield: 15 cookies
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Ingredients
1 cup roughly chopped pecans
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon pumpkin pie spice
½ teaspoon salt
½ cup pure maple syrup
⅓ cup pumpkin puree
¼ cup olive oil
1 large egg
1 teaspoon vanilla extract
1 cup rolled oats
1 cup diced tart apple of choice
½ cup dried cranberries
Instructions
1. Preheat oven to 350 degrees.
2. Pour pecans onto a large baking sheet and bake until fragrant, 6-8 minutes. Set aside.
3. In a medium bowl, combine flour, baking powder, pumpkin pie spice, and salt. Whisk until well combined.
4. In a large bowl, whisk together syrup, pumpkin puree, oil, egg and vanilla extract. Pour the dry ingredients into the wet ingredients, then add the pecans, oats, apple and dried cranberries. Stir to combine.
5. Using the same sheet tray, line it with parchment paper. Use a ¼ cup measuring scoop to divide the batter into 15 cookies, then gently press down to form into a cookie shape.6. Bake until the cookies are set and the bottoms are golden brown, 18-22 minutes. Allow to rest on the sheet tray for 5 minutes, then carefully transfer to a cooling rack.
